Whitestone's Windsor Blue is one of my most cherished New Zealand
cheeses, if you're not regularly a fan of blue cheese I think this one from Oamaru will definitely change your
mind. It's soft, creamy and buttery texture spiked with a mild blue flavour is sublime. Easy to indulge on, on it's own, but I'm also known to nibble on it with dried fruits such as figs, dates and raisins, or when I'm feeling especially wicked I spread it thickly on to fruit toast and "Full of Fruit" biscuits. Not only is it a favourite of ours, but with the judges too having won Supreme Champion in 2006, judges described it as "a creamy blue with a soft buttery texture and a silky smooth mouth feel. It has a unique blue culture that dissects the rich curd and combines to produce a delicate flavour that intensifies with ageing." It's one of New Zealand most decorated cheeses, Whitestone's flagship cheese and I think perfect for Christmas.
