- Confetti Roasted Root Medley

- 5 to 6 cups of root vegetables and tubers, such as carrots, parsnips, potatoes, kumara, sweet potatoes, yams and
beetroot, 1cm cubed
- ½ cup of dried cranberries / craisins
- a couple of pieces of cinnamon bark
- 3 tablespoons of olive oil
- freshly grated zest and juice of 1 orange (optional)
- Sea salt and pepper
- Preheat oven to 200°C (392°F)
- Combine the vegetables through the olive oil, dried cranberries and cinnamon in a large roasting pan until well
coated.
- Baked for 20 to 25 minutes turning the vegetables frequently so that they are golden and crispy on all sides.
- Toss through a little orange juice and zest and bake for a further 4 to 5 minutes.
- Season well with salt and pepper and serve alongside the Turkey Roulade with Apple, Cranberry and Pecan
