  • Steamed Broccoli with Sundried Tomato Butter
  • 2 heads of broccoli, broken into small florets
  • iced water
  • 75 grams of soft butter
  • 4 sundried tomato halves packed in oil, drained and minced
  • Sea salt and black pepper
  1. Steam broccoli over a pan of boiling water for approximately 6 minutes, until luminously green and tender, but still with some bite.
  2. Refresh the broccoli immediately in iced water.
  3. Gently reheat again briefly when ready to serve with the Turkey Roulade.
  4. Top with the following butter.
  6. For the Sundried Tomato butter:
  7. Beat the soft butter and minced sundried tomato halves together with freshly ground sea salt and pepper to taste.
