I made a bit of a "mess" while making these to photograph. I had hoped they would work better as popsicles by
setting them in the shallow tubs, but they were rather too top heavy to eat easily. However that only adds to their
namesake Eton Mess!
This time refreshingly frozen and zesty Eton Mess with added lemon, can be eaten from a small tub with wooden paddles
or frozen in deeper moulds on sticks.

- Frozen Lemon Eton Mess

- 2 cups of vanilla or lemon flavoured ice cream, slightly
softened
- 1 cup of red berries, raspberries, strawberries, fresh or frozen
- 1 cup of crushed meringues
- 1 to 2 tablespoons of Limoncello liqueur, optional
- zest of 1 lemon
- Place the softened ice cream in a large bowl, along with the berries (you may want to chop any bigger ones into
¼s) and crushed meringues.
- Stir to combine and add the Limoncello if using and lemon zest to taste.
- Spoon the mixture into small ramekins or popsicle moulds and place into your freezer for several hours or
overnight.
- Makes 8 to 12 depending on the size.
