Served at the beginning, middle or the end of your festive menu, this light Apple Cider Sorbet is a divine addition. Try it with Perry (pear) or Berry cider for a different take.

  • Apple Cider Sorbet
  •  
  • 1 litre of apple cider
  • ¼ cup of golden caster sugar
  • the freshly squeezed juice of 1 lemon.
  • 1 cinnamon stick
  1. In a saucepan combine all the ingredients and gently heat until the sugar has dissolved.
  2. Turn off the heat, cover and leave to infuse the flavour until cool.
  3. Remove the cinnamon stick.
  4. If you have an ice cream machine chill the mixture until ready to churn.
  5. Alternatively place the mixture in a suitable container and freeze, whisking every few hours until fluffy and set, or once frozen break into chunks and whiz them until fluffy in your blender or food processor.
  6. Return to the freezer until ready to serve.
  7. Serves 4 to 6
