The last batch of lamingtons I made were rather a disapointment. I'm still trying to come to terms with the challenges of baking at altitude. The results are often not the same as acheived, when baking at sea level in NZ. :-(

Bron - It is amazing that even the greatest baked goods require so few ingredients that most of us always have on hand. Truthfully, I have not had lamingtons since I was a kid, but I have been slowly leafing my way through mum's old Edmond's Cook Book to jog childhood memories. Yours are swoon-worthy, perfect for creating new memories.

Those look more like truffles (or maybe those marshmallows with toasted coconut) than little cakes...I love that. I'm looking for cakes to make my husband for his 30th b-day this week. He loves coconut, but I think he's leaning towards a German chocolate cake. These would be great for anytime though...

I've never made lamingtons before but seen them everywhere in the bakery shops hehehe... so traditional yet missed to be taken seriously. I'll try to make them soon, Bron!! Photos look gorgeous!!

my first brush with lamingtons (back then, I thought they were "lemmingtons") was when we had an australian exchange student stay with us for a year back in 1991. my mum has been making them for christmas ever since - they're so easy to make and so indulging! i have never seen them adorned so beautifully - especially love the kiwiberries!

Those lamingtons look nothing like the yucky ones I've had. Maybe I should opt for homemade ones as opposed to the store bought ones. Might just change my mind about them. =)
