These look wonderful and I am so sad that the berry season will be well and truly over when I return to Scotland. I have overdosed on berries this year and it has been bliss. Unfortunately I am in Cyprus just now where berries are not to be found. Lovely idea to use other flours too :)

So pretty Bron, both the friands and the fabric :-) Love the raspberry & pistachio combination. We have a picnic loaf in that combo that gets made a lot in spring!

So pretty. I'm glad you found a use for the fabric. I do hope raspberries become affordable soon. Blueberries have just come down in price here. Here our strawberries are best August, September. Took me 12 months of living here to discover that.

Gorgeous Bron. I love the colors and textures. It looks easy to make too.

Your berry cupcakes look so sweet and pretty. I learned that berries are good for those who often have urinary tract infection. So I guess apart from being delicious, these treats are healthy too.

Yumm, I love regular friands but made with pistachio? You've improved upon perfection!

I tried this recipe and found they just sank when I took them out of the oven why is this? can you help me?

Una Ni Chinnseallaigh — Monday 3rd October 2011 1:22 am

I'm sorry you had a problem Una, there are several reasons why they may have sunk.

1) they may have needed a little longer baking, as ovens often vary greatly, they should be firm when lightly pressed.
2) your baking moulds may been larger than mine, again creating a need for a longer baking time.
3) the pistachios may have not been quite ground fine enough/or another measurement was slightly off (larger eggs,) making the batter too moist.

What an entry for Sweet New Zealand Bron!!! I love these kinds of treats, and they have all the ingredients I like! I need to find some good pistachio nuts though, not easy in New Zealand i must say.

These little friands look gorgeous - raspberry and pistachio is a lovely combination and I love that you made them gluten-free.

Hope you'll join in Sweet New Zealand again - this month's link-up is now open here http://bit.ly/nScpZE
