I LOVE passionfruit but there is never enough in those tiny fruits. I can practically taste your snow eggs they look 'truly scrumptious' to quote the song from Chitty Chitty Bang Bang.

Great post and beautiful photos. My mom´s favorite dessert is “Îles Flottantes” and she get mad when she ask for it and bring her snow eggs ;).I love passion fruit (on juice, sweet and savory sauces)and, you see, I certainly love this fresh dessert.

These are lovely, and it's a wonderful tribute to the folks who are being recognized by LiveSTRONG Day. I had to laugh at your remark that, as with most of the dishes you create, to consume them takes a fraction of the time it did to create and photograph. Isn't that always the case! I think that's why there are people who just love to cook and people who can't be bothered. Those of us who love it enjoy the entire process, with the eating of the meal or dish just one facet of the whole. Beautifully done.

The passion fruit (which I love) would be tart next to that creamy anglaise! I make snow eggs a lot and never thought to top them with passion fruit. Thanks for the super idea!

I really love the thought of this, passion fruit being my favourite and all... it's so beautifully presented! i have never made iles flottantes myself, we have a similar thing in austria, fluffy, browned egg whites, but not floating... rather they're supposed to form a mountain range - how fitting!

mmmm, I had snow eggs for the first time last month! A friend made them for me when I got my wisdom teeth out and I had been waiting to try both snow eggs and floating islands since learning about them on blogs in the past couple years. Now it's my turn to make them! And, finally, with access to NZ passionfruit again, I can't wait! Thanks for sharing your recipe and beautiful photography. I always enjoy your blog.
