    Wow that's beautiful, and the brulee crust sounds magic! I like the contrast of the green trees and golden tart too.

    Happily drooling in my mind. Super thanks for the pastry recipe. Ideas roaming in my mind - this has to be a lemon tart making weekend. Smallest I can do is for 2+ - yet is only 1 of me. Will do my best to stretch it out for feeding over two days, yet will be tempting.....

    I never make enough pastry. I really don't. And interestingly I have been thinking about a citrus tart lately. I have a lime filling in mind. I actually recently attended a pastry class and the teacher blowtorched the top of his lemon tarts. They were individual sizes, and he had this great contraption that looked like a little round iron that you placed evenly on top then gently pressed down. Seems this is what many professionals use to get an even finish?? This looks great. Thank you for all the lovely pastry recipes and references.
