    These look Gorgeous!!!
    I hope I can find the time to try them, so delicate!
    As I cant get golden syrup here I would probably use the honey and hope for the best !

    Ooh I've never tried making these before but love the combination of the soft cream and crunchy snap..they look so pretty!

    these look great! do you know how or if it is possible to make it glutten free?

  • Hi Michal, thank you for your question, I'm afraid I've never made brandy snaps with gluten free flours, so I'm not quite sure on how their result would be. However I can see no real issue why a 50/50 mix of rice flour and cornflour/corn starch wouldn't work as brandy snaps are a crunchy texture in nature.

    Ever since Cooking School, which is rather a long time ago, I have made Brandy Snaps from time to time. Sadly, mine go soft quite quickly after they have been taken out of the tin - I don't store them until they are completely cold. I have tried several recipes using either caster, soft brown or demerara sugar with all the other ingredients that are in the recipe. Can you give me any advice?

    sorry to hear you haven't had much luck storing your brandy snaps.
    My only thoughts are that...

    * perhaps they were not quite cooked long enough to become brittle and hard, it can be tricky to time them perfectly
    * your container wasn't completely air tight / or you have a high humidity, you could try wrapping them tightly in plastic before placing them into your container
    * in truth however homemade snaps probably will never last as well as bought ones.

    I hope is of some help if you decide to try again.
