You know, I have some Lyles syrup in the cabinet right now, and I think I will make some Anzac biscuits, in honor of the day. The pavlova in the sandwiches actually kind of looks like ice cream - which would probably be good in there too I'd imagine. Gorgeous photos Bron!

Wow, what an inspired combo! Made some Anzac biscuits myself yesterday but would never have though of sandwiching them together with pavlova. Gorgeous photography - I love finding new NZ blogs :)

A new Australian restaurant called Bondi opened last year in San Diego, where I had vegemite on toast for breakfast. Let's just say I think I would have preferred your Pavlova sandwiches. Their muesli with lemon yogurt and poached fruit was delicious though. Your lovely post is inspiring me to explore Australian and New Zealand cuisine even more.

Oooh, clever! We have a South African version of Anzac biscuits called crunchies so I grew up on these little treats full of wholesome stuff. The addition of the meringue is totally inspired - love the photos too!
