Bron I have some amaranth and have been meaning to try it and some other less common flours. Got to get on to that.
These biscuits look lovely, well your photos always are. Call them biscuits or cookies, I wish I had a few.

Lovely website you have. I have subscribed to see what else you present here. Lovely cookies! I love amaranth, although I bake more with popped amaranth than with the flour. We actually have amaranth flour in the regular supermarket but not things like wheat flour. Funny, no?

I've heard of amaranth flour before but never used it. We don't get that kind of flour in these parts.

Bron, I am so glad I found your blog! your claufoutis event was what landed me here, but it was catching the word "New Zealand" in this entry that really got me excited. I spent four years of my childhood in Auckland and seem to have left a piece of my heart there.

These biscuits look so delicious! I love the simple combination of flavors and the idea of substituting amaranth flour. Will have to give them a try soon.
