Fab looking salad Bron. I've seen a recipe where thin slices of mango are quickly fried to caramalise them. It might go well here also.

I followed the salad link from the main page because I just had to see the recipe for the wonderful looking salad! I love adding bacon to salads but I've never tried the combination of mango and bacon before. Looks great, sounds great, and I bet it tastes wonderful! I love the combination of salty and sweet in a salad!
