Could you send Russell Crowe over to revive me? I just fainted after seeing this. The ginger crunch is an absolute must try as is the ice cream.

Looks fantastic - have never tried ginger crunch (haven't heard of it either) but I'll have to give this a shot and see if my kiwi mate thinks it makes her swoon like I think it will ;)

i made this last night -- delicious! i thought it would be like cake, so i was a bit worried as i pressed the very dry mix into my tray -- but i guess it is like shortbread, a great texture. and the flavour! i must admit i love ginger so i put an extra teaspooon in the base and it worked well (and i'm now out of ginger). i also used half white/half brown sugar, as i'm a brown sugar addict :-) i could use the topping for other thinsg to (over ice cream, with nuts in a tart). so delicious! thank you!!

Hi Bron,

Thank you so much for posting a recipe on ginger crunch. When I was last in NZ (end of May to mid June), I ate as much as I could (i.e. practically daily) because I knew that I'd get nothing like it in the U.S. Why it didn't occur to me to ask mum if she has a recipe, I don't know. Well, maybe because I'm so used to having it in cafes instead of smelling it bake in the oven at home. But now I will make it here in Los Angeles, and I will lovingly share it will all my friends - a little taste of NZ abroad.
