Could you send Russell Crowe over to revive me? I just fainted after seeing this. The ginger crunch is an absolute must try as is the ice cream.

I am so happy that you posted this. What an amazing way to end the festa!

I've never heard of ginger crunch and, being a big ginger fan, can't wait to make this. It looks like the perfect cake. Thanks for the recipe.

I was late too Bron! Drats.
That ginger crunch looks fantastic - is it the topping that is calling me so loudly. I think I really "need" this.
Beautiful ice cream.

I think you need some chocolate accents on the ice cream.

Looks fantastic - have never tried ginger crunch (haven't heard of it either) but I'll have to give this a shot and see if my kiwi mate thinks it makes her swoon like I think it will ;)

Loverly Bron... Ginger is one of my favorite flavors... adds a bit of zing! Must be starting to warm up down there since you're churning up ice cream!

i made this last night -- delicious! i thought it would be like cake, so i was a bit worried as i pressed the very dry mix into my tray -- but i guess it is like shortbread, a great texture. and the flavour! i must admit i love ginger so i put an extra teaspooon in the base and it worked well (and i'm now out of ginger). i also used half white/half brown sugar, as i'm a brown sugar addict :-) i could use the topping for other thinsg to (over ice cream, with nuts in a tart). so delicious! thank you!!

Hi, I happen to stumbled upon your site and discover an array of wonderful creations. Lovely ginger crunch here! Bet they taste as yummy as they look!

Hi Bron,

Thank you so much for posting a recipe on ginger crunch. When I was last in NZ (end of May to mid June), I ate as much as I could (i.e. practically daily) because I knew that I'd get nothing like it in the U.S. Why it didn't occur to me to ask mum if she has a recipe, I don't know. Well, maybe because I'm so used to having it in cafes instead of smelling it bake in the oven at home. But now I will make it here in Los Angeles, and I will lovingly share it will all my friends - a little taste of NZ abroad.

Ginger crunch sounds awesome, especially to a ginger freak like me! And I choose bar cookies over fiddly shapes any day, so this looks set to be my perfect confection! Thanks for posting the recipe :-)
