Peter Rabbits Carrot and Caraway Fritters

I first made these Carrot and Caraway Seed Fritters for my little Samantha’s 1st birthday a couple of years ago, it was a Peter Rabbit, Beatrix Potter themed picnic. They were a big hit and have now become a firm favourite for lazy Sunday afternoons.

Peter Rabbits Carrot and Caraway Fritters

  • Peter Rabbit’s Favourite Carrot and Caraway Fritters
  • 2 eggs
  • 1 teaspoon of wholegrain mustard
  • 1/2 teaspoon of caraway seeds
  • pinch of salt
  • freshly ground black pepper
  • 1 cup of grated carrot
  • ½ cup of grated aged cheddar cheese
  • ½ cup of flour
  • 1/4 cup of milk
  • 1½ teaspoons of baking powder
  • olive oil
  • 100 grams of softened cream cheese
  • grated zest of 1 lemon
  • salt and pepper
  • 1 tablespoon of chopped fresh chives
  • small sprigs of flat leaf parsley, chervil or other fresh herbs

Peter Rabbits Carrot and Caraway Fritters

  1. Whisk together the eggs, mustard, caraway seeds, salt and pepper.
  2. Add the grated carrot, cheese and mix until well combined.
  3. Sift in the flour and baking power and fold together with the milk.
  4. Heat a frypan and pour in a little oil, place small teaspoonfuls of mixture into the hot pan and fry for 2 minutes each side or until golden.
  5. Place onto a plate with absorbent paper to drain.
  6. Mix cream cheese and lemon zest, salt, pepper and chopped chives together.
  7. Sandwich two fritters together with the cream cheese mixture and a few sprigs of the fresh herbs.
  8. Makes 20 sandwiched or 40 fritters

  8. I’ve been following your blog since I found you cited in Blogher, and I have to say, your photos really make your blog stand out. I follow a number of food/cooking blogs, and something about the closeups of your food and the evident love of food and love of making food that somehow gets communicated through the pictures is extraordinary. I run a social enterprise called www.globalgiving.org, which lets donors give directly to grassroots projects in the developing world, and we’ve been struggling with how to get better pictures, while trying to make allowances for the fact that technology is not always on the side of project leaders working in the developing world. But I think your blog is an object lesson for me on why we have to keep pushing on pictures … Thanks for the lesson (not to mention the recipes!)

  13. I know I will definately be echoing many previous comments that i am just gobsmacked by the visual impact of your blog. I know it thanks to your very considerable talent but does having a very good camera assist? I am wondering if I just need to use mine better or get a better one, I suspect both! Anyway love the fresh colourful appeal of your fritters - which I think can be a hard thing to achieve with something that can go brown!

    yes I think you can get a fairy good image with a average camera if your other conditions are right. However it’s also true I’m blessed with great camera and several great lenses.
